Eating three meals with a range of nutrients and vitamins is important for everyone. As we age, this can become more difficult for a variety of reasons – limited mobility and motor function can make grocery shopping and cooking difficult. Diminished taste and smell can make eating less enjoyable, and, if you find yourself eating alone every day, you may feel less motivated to cook. It’s not uncommon for seniors to skip meals, and end up lacking nutrients and energy as a result.
To help you stay active and healthy, today we’d like to share three quick meals for seniors that are easy to make and satisfy nutritional requirements. Here is a day’s worth of healthy meals that can be easily prepared, and are delicious, too:
Role it tightly, cut in half and enjoy!
Breakfast – Oatmeal with berries
If you are prone to skipping breakfast, make your life a little easier by letting the crockpot cook breakfast while you sleep. Add fresh or frozen berries to a crockpot with a pat of butter, one serving of old-fashioned oats and one part water. Cook on low for several hours, or overnight. When it’s done, this oatmeal has the consistency of bread pudding. If you don’t have a crockpot, you can also prepare oatmeal normally and simply add berries to it at the end.
Lunch – Salmon Wrap
This tasty lunch is not only easy to make, but it’s also full of healthy fats that are good for heart and brain health. Start with boneless, skinless Alaskan salmon and combine in a bowl with chopped avocado, tomato and plain yogurt. Give it a quick stir and then place a few scoops on a whole grain tortilla or wrap. Role it tightly, cut in half and enjoy!
Dinner – Southwest Chicken Salad
Start by cooking a boneless, skinless chicken breast with olive oil in a frying pan over medium heat. Chop up the chicken and add salsa and canned black beans for a super simple meal, or add mixed greens and a simple vinaigrette for a more traditional salad. If you cook extra chicken, you can refrigerate and save it for use in salads, wraps and other meals.
